  4. Chop into pieces. Once you remove the seeds, use your knife to make ½ inch dice out of each spear.

Julienned Cucumbers

  1. Before you start cutting your cucumber, make sure you thoroughly wash it with cold water.
  2. Lay the cucumber flat on your cutting board, and using a santoku knife, trim off each end of the cucumber.
  3. Break the cucumber down into more manageable pieces–we recommend cutting it into 3 to 4 pieces.
  4. Stand your first piece of cucumber up vertically and carefully slice down one side of the cucumber to remove the skin on that side.
  5. Lay the cucumber flat on this side and begin cutting thin slices lengthwise, making your way across the cucumber until you have 6 to 8 thin slices.
  6. Stack these thin slices on top of each other and carefully begin cutting matchstick-shaped pieces of cucumber.
  7. Repeat these steps for your remaining 2 to 3 pieces of cucumber.

Diced Cucumber

  1. Lay the cucumber horizontally on your cutting board and, starting about a ½ inch from the end, cut long slits down the length. Depending on the width of your cucumber, you’ll make roughly two or three slits.
  2. Give the cucumber a half turn and cut slits the same length down that side too. You’re essentially cutting your first cuts in half.
  3. You’ll now have long cucumber fingers still attached at the end. Dice them by cutting down the width of the cucumber.
  4. And that’s it. With a uniform dice like this, you’ll not only produce a prettier dish, but you’ll also make it easier and more enjoyable for people to eat.

Brunoise Dice

Dicing your cucumbers adds just one step to the Julienne cut you have already done. Take your julienne cuts and bunch them up with your hand. Then cut the julienne into equally shaped dice. There you have it.
Aim for dimensions of about 2mm X 2mm X 2mm (1/16 in X 1/16 in X 1/16 in).
